LEMON CHICKEN CASHEW SALAD
Ingredients
1 pound cooked chicken, shredded
4 green onions, thinly sliced
4 tablespoons Greek yogurt
1/2 cup Earth & Vine Lemon Rosemary Marinade
3 tablespoons mayonnaise
2 tablespoons chopped cilantro
¾ cups cashews
Green leaf lettuce
Preparation
Mix all ingredients together and serve on lettuce leaves.
Serves 2 to 3
Tressa's Tip: This makes a great filling for sandwiches or wraps.
